Ingredients 2 cups flour. 1/4 cup sugar. 1 teaspoon baking soda. 1 teaspoon baking powder. 1/4 teaspoon salt. 1 1/4 cups plain Greek yogurt. 1/2 cup butter, melted. 1/2 cup brown sugar. 1/4 cup milk. 1 egg. 1 teaspoon vanilla extract. 1 cup fresh apricots, chopped. Directions Preheat oven to 375 F. In a large bowl, whisk together flour, sugar, baking soda, baking powder and salt. In a separate bowl, stir together yogurt, butter, brown sugar, milk, egg and vanilla. Add to dry ingredients and sir until nearly incorporated. Fold in apricots and spoon into prepared muffin tin.
