Four-Fruit Salad

Pears are a big crop in Oregon, with several varieties ready to pick right now! This delicious fruit is a good source of vitamin C, fiber and potassium. They’re ready to eat right off the tree, and they can also be dried or sliced up for a salad.

Pick up some pears today from your local grocery store, farm stand or farmer’s market!

Servings: 6.

Ingredients

  • 1 cup seedless grapes.
  • 1 cup orange, cut into sections.
  • 1 large apple, cut into slices.
  • 1 large pear, cut into slices.

Directions

  1. Toss all ingredients together.
  2.  Serve on a lettuce-lined plate with a scoop of low-fat cottage cheese and light dressing, in a glass dish with a scoop of sherbet on top or in a bowl topped with yogurt.

  • Selection: Apply gentle pressure to the neck of the pear. It’s ripe if the neck is slightly soft.
  • Storage: Once ripe, pears can be stored in the refrigerator for three days.
  • Preparation: Leave the skin on the pear for the most fiber. Slice as desired.
  • Cooking: Enjoy fresh or try baking, poaching or grilling your pears.
