And they go with any meal, from omelets to sandwiches to soups and pastas. They also make a great snack by themselves! Pick some up today! Prep Time: 20 minutes. Cook Time: None. Servings: 15. Ingredients 2 15-ounce cans black-eyed peas or black beans (try a mix, or other types). 1 1/2 cups corn (canned, frozen or fresh). 1 bunch cilantro. 1 bunch green onions (about 5 green onions). 3 medium tomatoes. 1 avocado (optional). 1 tablespoon vegetable oil. 2 tablespoons vinegar or lime juice. 1/2 teaspoon each salt and pepper. Directions Drain and rinse black-eyed peas (or black beans) and corn. Chop cilantro and green onions. Dice tomatoes and avocado. Combine all veggies in a large bowl.
