Fresh Apricot Muffins

Ingredients

  • 2 cups flour.
  • 1/4 cup sugar.
  • 1 teaspoon baking soda.
  • 1 teaspoon baking powder.
  • 1/4 teaspoon salt.
  • 1 1/4 cups plain Greek yogurt.
  • 1/2 cup butter, melted.
  • 1/2 cup brown sugar.
  • 1/4 cup milk.
  • 1 egg.
  • 1 teaspoon vanilla extract.
  • 1 cup fresh apricots, chopped.

Directions

  1. Preheat oven to 375 F.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder and salt.
  3. In a separate bowl, stir together yogurt, butter, brown sugar, milk, egg and vanilla. Add to dry ingredients and sir until nearly incorporated.
  4. Fold in apricots and spoon into prepared muffin tin.
  5. Bake for 18 to 22 minutes.

  • Preparation: Rinse under cold water before eating. Cut along the natural line and remove the pit.
  • Cooking: Apricots can be enjoyed fresh, grilled, broiled, poached, pureed or made into preserves.
