Kiwi, Banana & Apple Salad

Kiwis are kid-friendly, sweet, delicious and add a touch of color to recipes!

Cook Time: 5 minutes.

Ingredients

  • 2 medium kiwis, peeled and cubed.
  • 1 medium banana, sliced.
  • 1 medium apple, cubed.
  • Juice of 1 lime.
  • 1 ½ teaspoon olive oil.
  • 1 teaspoon vinegar.
  • 1 teaspoon honey.
  • 1/8 teaspoon salt.
  • 1 tablespoon fresh mint or basil, finely chopped.

Directions

  1. In a medium bowl, whisk together lime juice, olive oil, vinegar, honey and salt.
  2.  Add all other ingredients to the dressing and toss to coat.

  • Kiwis are one of the most nutrient-dense fruits. They have nearly twice as much vitamin C as an orange!
  • They are an excellent source of vitamin K which keeps your blood and bones healthy.
  • Kiwi also contains fiber, potassium, folate and vitamin E.

What’s the Best Way to Eat Kiwi?

  • Slice it up, eat it like an apple or cut it in half and scoop out the flesh with a spoon.
  • Add it to cobbler, fruit salad, smoothies, tropical salsa or a yogurt parfait.

Selection & Preparation

  • Selection: Choose kiwis that are firm but give slightly to pressure.
  • Storage: Store at room temperature or on the refrigerator. To ripen faster, put your kiwi in a paper bag with an apple or banana. 
  • Preparation: No preparation required! The fuzzy skin is edible. You can also peel it with a vegetable peeler or pairing knife.
  • Cooking: Kiwi is best enjoyed raw, frozen or dried.
