Sweet Potato French Fries

Sweet potatoes are a good source of potassium and vitamin C. They also make a great side dish or soup.

Servings: 4 to 6.

Ingredients

  • 1 large sweet potato, sliced into 3-inch-long fries.
  • 1 teaspoon olive oil.
  • 1 tablespoon brown sugar.
  • Cumin and chili powder as desired for flavor.

Directions

  1. Preheat oven to 400 degrees.
  2.  Toss sweet potatoes with oil. Add in brown sugar, chili powder and cumin.
  3.  Place in one layer on a cookie sheet. Bake for 30 to 40 minutes until starting to brown.
