Video Recipe: Thai Turkey Lettuce Cups June 4, 2018 Play Video Crisp, crunchy and full of flavor, these Thai Turkey Lettuce Cups are easy to make, fun to eat and oh-so nutritious! You can save time by using pre-cut veggies or save money if you’re willing to spend a little time to chop your own. Ingredients: 2 tablespoons rice wine vinegar. 2 tablespoons brown sugar. 3 tablespoons low-sodium soy sauce. 3 tablespoons of canola oil (divided). 1 pound of ground turkey. 1-1/2 cups of chopped cucumber. 1 cup of matchstick carrots. 1/4 cup chopped peanuts. 2 tablespoons of chopped fresh mint. 12 butter lettuce leaves. Optional: 1/4 teaspoon red pepper flakes. Create Sauce: Whisk together rice wine vinegar, sugar, soy sauce and 2 tablespoons of oil. Saute Turkey: Heat remaining tablespoon of oil in a skillet over medium heat. Add turkey, stirring and breaking it into crumbles. Cook until lightly brown (about 7 minutes). Add 1/4 cup of the sauce to turkey and cook 4 minutes longer until sauce is absorbed. Assemble: Arrange 12 butter lettuce leaves for filling. Place about 3 tablespoons of turkey into each lettuce leaf. Top with cucumber, carrots, peanuts and mint. Drizzle remaining sauce over each lettuce cup and serve. Enjoy!
