Video Recipe: Sunny Day Bowl With Citrus Avocado Dressing

The bright and delicious Sunny Day Bowl with Citrus Avocado Dressing is the perfect way to get fresh veggies and hearty protein all in one bowl.

Ingredients:

  • 2 cups quinoa, dry.
  • 1 avocado.
  • 2 medium carrots.
  • 1 medium zucchini.
  • 1 block of firm tofu.
  • 1 cup cherry tomatoes.
  • 2 tablespoons low sodium soy sauce.
  • Juice of 2 small limes.
  • 2 medium apples.
  • 2 tablespoons olive oil.
  • 1 1/2 cup edamame, frozen.
  • 2 packages of mixed greens.

Cook Your Quinoa:  Add pre-rinsed quinoa to a pot with 4 cups water and salt to taste. Bring to a rolling boil and add edamame. Cover, lower heat to low, and let cook for 15 minutes.

Prep:  Chop apples, zucchini, carrots and cherry tomatoes. Set aside.

Cook Your Tofu:  Cut half of the block of tofu into bite-size pieces. Reserve the other half for the dressing. In a bowl, add lime zest, salt, pepper and 3 tablespoon soy sauce to your tofu to marinate. While marinating, preheat your pan to medium high and add olive oil. Once the pan is hot, add tofu and cook until browned.

Create Dressing:  Add remaining tofu, one half of the avocado, the juice and zest of half a lime, salt, pepper, 2 teaspoons soy sauce and 1/4 cup of water into the blender. Blend until smooth.

Build Your Bowl:  Add quinoa, veggies, apple and tofu into your bowl. Drizzle the Citrus Avocado Dressing over the top. Jazz up your bowl by topping with cherry tomatoes, sliced avocado, sesame seeds and any other fresh ingredients you like.
