Video Recipe: Stuffed Bell Peppers October 8, 2018 Play Video Full of flavor, these stuffed bell peppers are easy to make, tasty and nutritious! Tip: Precooking bell peppers makes their time in the oven short. Green bell peppers are the classic choice, but you don’t have to be traditionalist. Stuff red, yellow and orange bells and bring the color of fall to your dinner table! Ingredients: 1 pound ground turkey. 2 large carrots, chopped. 1 onion, chopped. 1 broccoli crown, chopped. 4 cups brown rice, cooked. 1 tablespoon olive oil. 1/2 cups of shredded cheese. 5 bell peppers, tops and seed core removed. salt and pepper to taste. Prep: While rice is cooking, prepare your veggies: chop carrots, onions and broccoli. Remove the seeds from bell peppers and broil in the oven until peppers have softened. If you prefer, place green peppers in a microwave-safe dish; cover and cook in the microwave until bright green and steaming, about 3 minutes. Saute Ingredients: Saute onions in olive oil over medium heat until softened and transparent, 5 to 10 minutes. Add the rest of the vegetables and cook over medium high heat, stirring frequently until vegetables are softened. Add ground turkey and cook until browned. Stir in cooked rice until fully mixed. Season with salt and pepper to taste. Stir in 1 cup of cheese. Assemble: Fill each bell pepper with the rice mixture and top with the remaining cheese. Place under the broiler until cheese is melted, about 2 or 3 minutes. Prep Time: 40 minutes.Serves: Five.
