Heart-healthy Strawberry Salad June 6, 2022 Walnuts are rich in omega‑3 fats, a type of polyunsaturated fat known to lower serum triglycerides and act as a natural anticoagulant. Strawberries are rich in anthocyanins, a type of flavonoid that works to reduce overall inflammation in the body. Balsamic vinaigrette, feta cheese and nuts give this strawberry salad a delicious tang and crunch hat will satisfy the entire family. Prep Time: 15 minutes. Cook Time: None. Servings: 4. Ingredients Vinaigrette 1 ½ tablespoons extra‑virgin olive oil. 1 tablespoon balsamic vinegar. 2 teaspoons shallots, minced. ¼ teaspoon salt. ¼ teaspoon black pepper, ground. Salad 6 cups spinach or mixed greens of choice. 1 cup strawberries, sliced. ¼ cup feta cheese, crumbled. ¼ cup walnuts, unsalted, chopped. Directions Add oil, vinegar, minced shallot, salt and pepper into small bowl and whisk until combined. Allow dressing to stand for 5 to 10 minutes until shallot softens. Combine spinach, strawberries, feta and walnuts into large bowl. Drizzle dressing over salad and toss until evenly coated.
