Easy Pumpkin Spice Breakfast

Try a delicious and simple breakfast with pumpkin spice overnight oats. This creamy blend of winter flavors can be prepped in minutes and chilled overnight. It’s perfect for a nutritious breakfast on-the-go or even a sweet, guilt-free dessert.

Yield: 4 servings.

Ingredients

2 cups non-dairy milk (or any dairy milk or milk alternative).

¼ cup maple syrup.

1 teaspoon pumpkin pie spice.

1 teaspoon vanilla extract.

2 cups pumpkin puree.

2 cups rolled oats.

2 tablespoons chia seeds.

Optional toppings: walnuts, pecans or raisins.

Directions

Mix the non-dairy milk with the maple syrup, pumpkin pie spice and vanilla.

Combine the blended milk with the pumpkin puree, oatmeal and chia seeds in a medium bowl.

Cover and let sit in the refrigerator for at least an hour or overnight. If the mixture is too thick, add a little more milk.

Add optional toppings and enjoy chilled or warm.

Serving size: 1 ½ cups.
