Mixed Berry Popsicles

Sweet, tart and bursting with color, mixed berries are a true taste of summer. Whether it’s blueberries, raspberries, boysenberries or blackberries, this vibrant blend offers a delicious mix of flavors and nutrients. Toss them into a smoothie, sprinkle them over yogurt or enjoy them fresh by the handful.

You can find mixed berries at your local farmers market during the summer and in grocery stores throughout the rest of the year.

Prep Time: 5 minutes.

Cook Time: 4 hours.

Servings: 8 popsicles.

Ingredients

  • 1 cup blueberries.
  • 1 cup raspberries.
  • 1 cup strawberries.
  • 1 cup blackberries.
  • 1/4 cup maple syrup.
  • 4 teaspoons lemon juice.
  • Optional: Lemon zest.

Directions

  1. In a blender, food processor or with an immersion blender, puree together the blueberries, raspberries, strawberries and blackberries. Add in the maple syrup and lemon juice. Optional: add lemon zest.
  2. Pour the mixed berry puree into your popsicle molds.
  3. Place your popsicle sticks in your popsicle mold and freeze for at least four hours until firm.
