Creamy Mashed Cauliflower for Any Night of the Week

Cauliflower may not be the first thing that comes to mind for comfort food, but it can hit the spot when prepared the right way. Its mild flavor and soft texture works well in may meals. Try it as a creamy mashed cauliflower, a low-carb dish that brings comfort and ease to busy weeknights.

Look for fresh cauliflower year‑round in the produce aisle and find locally grown cauliflower at farmers markets from fall through early spring.

Ingredients

  • 2 medium heads cauliflower, cut into 1/2-inch pieces
  • 2 tablespoons olive oil or unsalted butter
  • 4 garlic cloves, minced
  • 1/4 to 1/2 cup milk of choice
  • Salt and pepper to taste
  • Optional seasonings and garnishes: Nutritional yeast, Parmesan, parsley, thyme, chives, rosemary, gravy

Directions

  1. Place cut cauliflower in a steamer basket over a pot with boiling water. Cover and steam for about 15 minutes or until very tender. If you don’t have a steamer basket, the cauliflower can be simmered directly in the water for about 20 minutes. Drain and set aside.
  2. In a small skillet over medium-low heat, add 1 tablespoon butter or olive oil and cook the garlic for two to three minutes, until lightly golden. Remove from heat.
  3. Place the cooked cauliflower in a food processor, blender or use an immersion blender in a pot. Add the garlic, remaining butter or olive oil, salt and pepper. Blend until smooth, adding a splash of milk as needed to reach a mashed potato consistency.
  4. Serve warm. Add herbs or extra seasoning if desired.
