Build-Your-Own Buddha Bowl

This colorful bowl is easy to customize with ingredients your family already has on hand. Prep a few ingredients ahead of time, then let everyone build their own bowl for a delicious, healthy lunch or dinner.

Ingredients

  • 2 cups cooked lentils 
  • 2 cups cooked grains such as rice, quinoa or millet 
  • 3 to 4 cups vegetables, choosing 2 to 4 such as shredded carrots, sliced cucumbers, bell peppers, tomatoes, broccoli, corn, sweet potato or peas. These can be a combination of fresh, frozen or roasted vegetables. 
  • Additional toppings: Avocado, cilantro, sunflower seeds, green onions, pumpkin seeds, almonds 
  • Choose your favorite dressing or sauce such as ranch, Italian dressing, balsamic vinaigrette, salsa, hummus thinned with a little water, or try the simple lemon dressing below. 

Lemon Dressing Ingredients 

  • 3 tablespoons olive oil 
  • 2 tablespoons lemon juice 
  • 1 teaspoon Dijon mustard 
  • 1 teaspoon maple syrup or honey 
  • ½ teaspoon garlic powder 
  • Salt and pepper to taste 

Instructions 

  1. If needed, prepare the lentils and grain according to the package directions. Allow to cool slightly. If using pre-cooked lentils and grains, heat them up in the microwave. 
  1. Wash and chop the vegetables into bite-sized pieces. Cook vegetables such as broccoli, peas or sweet potatoes until they reach your desired tenderness or leave them raw for an added crunch. 
  1. Whisk together the lemon dressing ingredients in a small bowl or jar until well combined.  
  1. Divide the grain evenly among four bowls. Top each bowl with lentils, vegetables and any optional toppings. 
  1. Drizzle with lemon dressing, or your favorite dressing or sauce and serve immediately. 

Recipe Tip: Make it your own! Add even more flavor by seasoning the lentils or grains before assembling your bowl. Try taco seasoning, garlic and herb seasoning, curry powder, Italian seasoning, smoked paprika or everything bagel seasoning.
