Who says pudding has to be an indulgence? Mangoes are sweet, juicy and naturally creamy, making them an easy way to add tropical flavor to a snack or dessert. Fuel up with a high-protein mango pudding that works well as an afternoon snack or dessert.

Ingredients

  • 16 ounces silken tofu
  • 2 ripe bananas
  • 1 cup mango chunks, fresh or frozen (thawed if frozen)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Optional toppings: Cardamom powder, chopped pistachios, chia seeds, lime zest
  • Recipe tip: Silken tofu is often found in the shelf-stable section of the grocery store near Asian foods or other plant-based products.

Directions

  1. Combine mango chunks, maple syrup and half of the silken tofu together in a blender or food processor. Blend until smooth, then divide evenly among four serving bowls or dishes.
  2. Add the remaining silken tofu, bananas and vanilla extract to the blender or food processor. Blend until smooth, then gently pour over the mango mixture.
  3. Cover and refrigerate until chilled.
