Green Apple Coleslaw

Apples are one of the most loved fruits for a reason! They’re crisp, sweet and easy to enjoy in so many ways – whether fresh off the tree, sliced into salads or baked into something cozy. With so many varieties to choose from, like tart Granny Smiths or juicy Honeycrisps, there’s an apple for every taste. Try them in our featured recipe: green apple coleslaw. It’s crunchy, tangy and a refreshing twist on a classic side dish.

Look for fresh apples at your local farmers market during the late summer and fall, or find them year-round in the produce aisle.

Ingredients

  • 1/3 cup unsalted cashews.
  • 1 12-ounce bag shredded cabbage with carrot (coleslaw mix).
  • 2 cups Granny Smith apples, cut into thin strips (about three apples)
  • 1 cup seedless red grapes, halved.
  • 1/2 cup celery stalk, thinly sliced.
  • 1/2 teaspoon onion powder.
  • 1/2 teaspoon dry mustard.
  • 1/2 cup unsweetened plant milk or 2% milk.
  • Salt and pepper.
  • Optional: Poppy seeds, garlic powder, sunflower seeds.

Directions

  1. Place the cashews in a small bowl and cover them with hot water. Let them soak for at least 15 minutes, then drain and set aside.
  2. In a large bowl, combine the shredded cabbage and carrot mix with the apples, grapes and celery.
  3. To make the dressing, add the soaked cashews, onion powder and dry mustard to a blender or food processor. While blending, gradually pour in the milk until the mixture becomes smooth and creamy.
  4. Drizzle the dressing over the slaw mixture and toss everything together until evenly coated. Season with salt and pepper to taste.

Selection & Preparation

  • Selection: Fall is the best season for fresh apples. Choose apples that are firm and lack softness. Apples should be well colored and free of bruises, pitting, decay or insect damage.
  • Storage: Apples may be stored in the fridge for four to six weeks or can be put in a fruit bowl on the counter for a week. Wash apples by rinsing in cool water just before eating or adding to a recipe.
  • Preparation: Cut apples in half from the stem down and cut out the core from each half of the apple.
  • Cooking: Apples can be enjoyed whole or sliced. They can also be baked in the oven, mashed into applesauce, juiced or added to baked goods!
