Oregon strawberries, tender spring greens and heart‑healthy walnuts are the perfect flavor combination to this robust summer salad.

Heart-healthy Strawberry Salad

Walnuts are rich in omega‑3 fats, a type of polyunsaturated fat known to lower serum triglycerides and act as a natural anticoagulant. Strawberries are rich in anthocyanins, a type of flavonoid that works to reduce overall inflammation in the body. Balsamic vinaigrette, feta cheese and nuts give this strawberry salad a delicious tang and crunch hat will satisfy the entire family.

Ingredients

Vinaigrette

  • 1 ½ tablespoons extra‑virgin olive oil.
  • 1 tablespoon balsamic vinegar.
  • 2 teaspoons shallots, minced.
  • ¼ teaspoon salt.
  • ¼ teaspoon black pepper, ground.

Salad

  • 6 cups spinach or mixed greens of choice.
  • 1 cup strawberries, sliced.
  • ¼ cup feta cheese, crumbled.
  • ¼ cup walnuts, unsalted, chopped.

Directions

  1. Add oil, vinegar, minced shallot, salt and pepper into small bowl and whisk until combined. Allow dressing to stand for 5 to 10 minutes until shallot softens.
  2.  Combine spinach, strawberries, feta and walnuts into large bowl.
  3.  Drizzle dressing over salad and toss until evenly coated.
