Cauliflower Leek Soup February 4, 2022 The cooler temperatures have settled in and there’s no better way to warm up than with a delicious bowl of soup. Prep Time: 10 minutes. Cook Time: 40 minutes. Servings: 6. Ingredients 2 tablespoons olive oil. 3 cloves garlic, minced. 1 head of cauliflower, broken into florets. 3 medium-sized Yukon gold potatoes, diced. 2 leeks, just the white and light green parts, chopped. 5 cups low sodium vegetable or chicken broth. 1 teaspoon ground pepper. Directions Preheat oven to 400 F. Spread cauliflower, potatoes and leeks on a cookie sheet and coat with olive oil and garlic. Roast for 20 to 30 minutes, stirring vegetables halfway. Remove vegetables when they start to brown. In a large pot, add roasted vegetables, broth and ground pepper and bring to a simmer. Use immersion blender to blend soup until smooth.
