Berry Crumble Bars
Berries are a delicious, high-vitamin, high-nutrient summer delight. Eat by themselves or add to your meals in a variety of ways.
These lightly sweetened berry crumble bars are great for breakfast or as snack!
Prep Time: 15 minutes.
Cook Time: 35 to 40 minutes.
Servings: 9.
Ingredients
- 4 to 6 cups of raspberries, blackberries, or a combination of both.
- 1 teaspoon white sugar.
- 1 tablespoon all-purpose flour.
- 6 tablespoons packed brown sugar.
- 1 cup whole wheat flour.
- 2 cups oatmeal.
- 4 1/2 tablespoons olive oil.
- 1 large egg.
Optional
- 1 teaspoon salt.
- 2 teaspoons vanilla extract.
- 2 teaspoons cinnamon.
Directions
- Rinse and gently pat dry berries. In a large mixing bowl, mix berries with white sugar and flour until combined.
- Whisk egg, oil and vanilla together. Using a food processor, blender or pastry cutter, combine oil mixture with whole wheat flour, oatmeal, brown sugar, salt, and cinnamon. Combine until thoroughly mixed and coarse crumbs form.
- Press 2/3 of crumb mixture into 9×9 pan. Place berries on top of crust, distribute remaining crumb mixture on top of berries.
- Bake at 375 degrees for 35 to 40 minutes.
