Strawberry Salsa

Strawberries are one of the best early-summer fruits! They’re sweet and loaded with nutrients: Eight strawberries have as much vitamin C as one orange.

This recipe blends their sweet flavor with several favorite vegetables for a fresh summer salsa.

Ingredients

  • 1 1⁄2 cups fresh strawberries, chopped small (about 1/2 pound).
  • 1/2 jalapeno pepper, minced.
  • 1/4 cup onion, minced.
  • 2 tablespoons cilantro, finely chopped.
  • 1 1⁄2 teaspoons lime juice.

Directions

  1. Chop strawberries, jalapenos, cilantro and onion into a serving bowl.
  2.  Add lime juice and gently mix ingredients.
  3.  Refrigerate for 30 minutes before serving to blend and enhance flavors (optional).
  4.  Refrigerate leftovers within 2 hours.
