Video Recipe: Savory Lentil Street Tacos

The key ingredient to a great taco is the filling. Building flavor is the secret to this meatless alternative that results in a healthy filling that is not only good for you but tastes so delectable you won’t even miss the meat!

Prep Time: 10 minutes.

Cook Time: 40 minutes.

Servings: 12.

Ingredients

  • 1 cup chopped onion.
  • 1 cup chopped celery.
  • ½ cup chopped carrot.
  • 3 garlic cloves, minced.
  • 1 tablespoon olive oil.
  • 1 14.5 oz. can diced tomatoes with liquid.
  • 1 cup lentils, brown or green, thoroughly rinsed.
  • 2 cups vegetable stock.
  • 1 tablespoon plus 1 teaspoon chili powder.
  • 1 teaspoon salt.
  • 1 teaspoon cumin.
  • 1 teaspoon smoked paprika.

Directions

  1. Chop onion, celery, carrots, and mince garlic. Rinse the lentils and strain.
  2.  Mix all the seasonings (chili powder, salt, cumin, and smoked paprika) in a small bowl.
  3.  Turn Instant Pot onto “saute” function. Once the read out says “hot” add olive oil and onions. Stir frequently for approximately 3 minutes until the onions begin to turn translucent.
  4.  Add celery, carrots and garlic and continue to stir for 2 more minutes.
  5.  Press the cooker’s “cancel” button, and pour in the tomatoes, vegetable stock, lentils, and the seasoning mix. Stir to mix well.
  6.  Lock lid on instant pot and adjust to “Manual” for 20 minutes.
  7.  Once the timer goes off allow the instant pot to do a natural release for 10 minutes. Press the quick release button to let off the remaining pressure, being careful of the steam.
  8.  Warm tortillas on a hot cast iron pan or in the microwave. Layer two, add several spoonfuls of filling and top with your favorite taco toppings. Alternatively this filling can be served on gluten-free tortillas or lettuce wraps to accommodate dietary needs.

While this recipe is done in an instant pot, this can be made on the stove top as well! Follow the directions, but sauté over medium heat on the stovetop. To cook the lentils you will need to bring all the mixed ingredients to a boil and then reduce to medium low and cover for about 25-30 minutes until the lentils are tender.

This meatless taco filling can pull double-duty as a dip! Spoon leftovers into a bowl to serve with a dollop of Greek yogurt and some tortilla chips for a vegetarian and gluten-free friendly option you’ll feel good about serving to your guests at any get together.
